How to Roast Makhana at Home — 3 Easy Methods

Roasted makhana (fox nuts) is one of India's favourite guilt-free snacks. Roasting makhana at home takes under 10 minutes and lets you control every ingredient.

Method 1: Dry Roast on Stove (Classic and Oil-Free)

The simplest way requires nothing but a heavy-bottomed pan and low heat.

  1. Heat a wide non-stick or cast-iron pan over low to medium-low flame
  2. Add 1 cup of raw makhana in a single layer
  3. Stir continuously for 4-6 minutes until crisp and crackling
  4. Spread on a plate to cool

Pro tip: Roast in small batches. Overcrowding traps steam and makes them chewy.

Method 2: Ghee Roast (Rich and Aromatic)

  1. Heat 1 teaspoon of ghee in a pan over low heat
  2. Add 1 cup of raw makhana and toss to coat evenly
  3. Roast for 5-7 minutes, stirring frequently, until golden and crisp
  4. Spread on paper towel to absorb excess ghee

Seasoning: While still warm, toss with black salt, roasted cumin powder, and black pepper.

Method 3: Oven or Air Fryer (Hands-Free)

Oven: Preheat to 150°C. Spread makhana in a single layer on a baking tray. Bake 8-10 minutes, shaking halfway.

Air fryer: Set to 160°C. Air fry for 5-6 minutes, shaking once mid-way.

Storage Tips

  • Cool completely before storing
  • Use an airtight container at room temperature for up to 2 weeks
  • Never refrigerate — moisture will soften them
  • Re-roast for 2 minutes to revive crunch
